Prep Time = 5 Minutes

Cooling Time = 2 hours
FOR THE SYRUP
1/2 Cup water
1/4 Cup loose white tea
1/4 Cup maple syrup
1 Bottle Prosecco or 1 bottle Elderflower Pressé
125 g Pomegranat
1 Large jug full of ice
First make your syrup by adding all ingredients in a small saucepan. Bring to the boil and reduce the heat to a simmer immediately. Cook until the liquid has reduced by a third and leave to cool – cooling shouldn’t take more than 2 hours in the fridge.
Slice the pears thinly, preferably with a mandoline. Add to the jug along with the pomegranate seeds. Fill the jug with either Prosecco or Elderflower.
Step 3 :
When ready to serve pour the fizz into glasses and top up with about a teaspoon of the syrup per glass – or more if you like it sweet
